Watt hours, not watts
The label tells you the draw. Off grid you care about the total: watts times hours, minus the time the element spends off. A 500 W machine on a 70 percent duty cycle over eight hours needs about 2.8 kWh.
Add inverter losses of 10 to 15 percent, so budget around 3.2 kWh from the battery for that batch.

What that means for a power station
Most portable stations sold as 1 kWh or 2 kWh units will not finish a full batch on a large machine. They will run a 250 W stackable for a batch, and they will run any machine for a few hours.
Surge is not the problem here; a dehydrator has no compressor and starts gently. Capacity is the problem.
Panels to replace it daily
In good summer sun a panel produces roughly four to five times its rated wattage in watt hours per day. So 800 W of panels gives you something like 3.2 to 4 kWh, which covers one batch on a mid sized machine.
In winter, at higher latitudes, that figure can fall by two thirds. In practice off grid drying is a summer and autumn activity, which is also when the fruit is there.
Low wattage machines change the maths
Between a 250 W stackable and a 1,000 W shelf machine there is a factor of four in every figure on this page. If you are drying off grid, the small machine running two batches is easier to power than the big one running one.
Cut thinner, load fully, and start early so the batch runs while the panels are producing rather than off the battery overnight.
Solar dryers with no electricity
A passive solar dryer, a glazed box with vents and mesh trays, dries fruit and herbs in warm dry weather with no power at all. It is slower, it depends on the weather, and it cannot hold a temperature.
For herbs and apple rings in a Mediterranean summer it works. For jerky, or anywhere humid, it is not a substitute.

How many watt hours per batch? Roughly 1.4 to 5.6 kWh depending on the machine, plus inverter losses.
Will a power station run one? A small machine, yes. A large shelf machine, not for a full batch.
Is a solar dryer better? Cheaper and silent, but weather dependent and unsuitable for meat.
Safety note. Check the inverter's continuous rating rather than its peak, and follow the manufacturer's guidance on power supply. Do not dry meat in a passive solar dryer.
