The short version
Freeze-drying, or lyophilisation, takes water out of frozen food without letting it melt. The result weighs a fraction of the original, holds its original shape, and rehydrates in minutes.
Because the water leaves as vapour from a solid state, cells are not crushed the way they are in a dehydrator. That structural difference is the reason freeze-dried strawberries snap while dehydrated ones bend.
Sublimation, in plain terms
Under normal pressure ice melts into water before it evaporates. Drop the pressure far enough and it skips the liquid step entirely, going straight from solid to vapour. That change is called sublimation.
This matters practically: no liquid water means no collapse, no shrinking and no case hardening. It is also why the process needs a vacuum pump, and why it cannot be done in an oven.
What the machine actually does
It freezes the trays to roughly minus 40 C, pulls a vacuum, then applies gentle heat so the ice has enough energy to sublimate. The vapour refreezes on a cold surface or is drawn off by the pump.
A full cycle takes 24 to 40 hours on home machines, which is the trade you accept for the shelf life and texture.
What it is good for
Whole meals, dairy, eggs, berries and anything you want to store for years and rehydrate close to fresh.
It is a poor fit for fruit leathers, jerky and herbs, where a dehydrator is faster, cheaper and produces the texture you actually want.
Safety note. Freeze-dried food is only shelf stable if it is fully dry and sealed with an oxygen absorber. Any residual moisture in the centre of a thick piece will shorten storage life sharply, so follow the machine's dry-test guidance before packaging.
