Dehydrator vs freeze dryer: seven differences that matter
A dehydrator removes water with warm air in hours for a few hundred. A freeze dryer removes ice under vacuum in a day and a half for thousands. Neither is the better machine.

The core difference
A dehydrator blows warm air over food until the water evaporates. Cells collapse as the water leaves, which is why a dried apricot is dense and chewy.
A freeze dryer freezes the food first, then lowers the pressure so the ice turns straight into vapour without melting, a process called sublimation. The structure stays where it was, so the piece keeps its shape and snaps rather than bends.
What that means on the plate
Freeze dried strawberries taste closer to fresh and dissolve in the mouth. Dehydrated strawberries taste sweeter and more concentrated, because the flavour has nowhere to go while the water leaves.
Freeze dried food rehydrates in minutes and comes back close to its original texture, which is what makes full meals possible. Dehydrated food rehydrates slowly and never quite returns.
Cost, time and space
A capable dehydrator runs €60 to €400, finishes most loads in 4 to 14 hours and lives in a cupboard. A home freeze dryer starts around €2,200, runs 24 to 40 hours per batch, needs a vacuum pump and takes permanent floor space.
Running costs follow the same pattern. Manufacturer figures put a freeze drying batch at roughly 7 to 11 kWh, several times what a dehydrator load uses.
How to choose
Buy a dehydrator if you want fruit, herbs, vegetables and jerky, and if you want results the same day.
Buy a freeze dryer if you want a real food store of meals, dairy and eggs that keeps for years and rehydrates properly, and if the price and the noise are acceptable in your home.
Plenty of people end up with both, and use the dehydrator ten times more often.
Safety note. Both methods rely on removing enough water to stop microbial growth, and both depend on correct packaging afterwards. Follow USDA temperature guidance for meat regardless of which machine you use.
