Start with weekly volume, not maximum capacity

Manufacturers quote capacity per batch in kilos of fresh food. A small unit handles roughly 1.5 to 3 kg, a medium 3 to 4.5 kg, a large 5 to 7 kg.

Because a batch runs a day and a half, capacity per batch is effectively capacity per two days. If you want to put away a large garden harvest, a small machine will bottleneck badly.

Oil pump or oil free

Oil pumps are cheaper to buy, pull a deep vacuum reliably, and need oil changes and filtering. Oil free pumps cost more up front and remove that maintenance.

If you dislike maintenance jobs, pay for oil free. If you would rather spend less and do the oil change, the oil pump is not a compromise on results.

Tray area and tray depth

Total tray area decides how much you can spread thinly, which is what keeps cycles short. Deep trays let you load more but push cycle times up.

Stainless trays with rounded corners are much easier to clean than square-cornered ones, and they matter more here than in a dehydrator because you will be scraping frozen sauce.

Noise and placement

A vacuum pump runs for most of a 30 hour cycle. Most owners keep the machine in a garage, utility room or basement rather than a kitchen.

Check the door type too. A clear door lets you watch progress without breaking vacuum, which sounds trivial until your first batch.
