What each method leaves behind

Dehydrating removes water with warm air and typically leaves food at a higher residual moisture. Freeze drying removes it as vapour under vacuum and gets lower, which is the whole reason for the shelf life difference.

Freeze dried food also keeps its structure, so it stays light and porous. Dehydrated food collapses and becomes dense. That difference drives everything below.

Nutrition

Both methods hold on to most macronutrients. Vitamin C and some B vitamins are heat sensitive, so freeze drying retains more of them, and published comparisons generally show it ahead on those specific vitamins.

For a food store, this is a small factor. Nobody is storing dried strawberries as a vitamin C source, and blanching, storage time and light exposure all cost more nutrition than the drying method does.

Water needed to serve

The constraint people forget. Freeze dried food is drier, so it needs more water to come back: roughly two to three times its weight, and a full meal pouch can want half a litre.

If your emergency plan includes limited water, a store made entirely of freeze dried meals is a store you cannot serve. Dehydrated food needs water too, but ready to eat dried fruit, jerky and leathers need none at all.

Cost per stored calorie

Count the machine. A dehydrator at €150 processing weekly for years adds a negligible amount per calorie stored. A freeze dryer at €2,500 plus €0.35 a bag plus 7 to 11 kWh a batch is a different order of cost, and the food is bulkier per calorie.

Bought commercially the picture flips: freeze dried pouches are expensive, but so is your time. This is why most long term stores are built on cheap dry staples, with freeze drying used for the things nothing else preserves.

A mixed strategy

Bulk calories from dry staples you buy: rice, oats, pasta, beans, sealed into mylar with absorbers. Fruit, vegetables and herbs from the dehydrator. Meals, dairy, eggs and anything with a texture worth keeping from the freeze dryer if you own one.

That order also matches the cost. You can build most of a serious store before you decide whether the expensive machine is worth it.

Questions people ask

Does freeze drying keep more nutrients? More of the heat sensitive vitamins, yes. The difference is smaller than the marketing suggests.

How much water to serve? Plan two to three times the dried weight for freeze dried meals.

Which is cheaper per calorie? Dehydrated, by a wide margin, once the machine is counted.

Safety note. Long shelf life assumes food that was dried fully and sealed with an oxygen absorber, stored cool and dark. Rotate a store and inspect bags rather than trusting the year on the label.
