Where the number comes from

Long term storage figures come from studies and manufacturer testing on staples like wheat, rice, beans and rolled oats: dry, low fat, sealed with oxygen removed, stored cool and dark. Under those conditions decades are realistic.

The figure gets copied onto packaging listings as though the bag caused it. It did not. The bag stopped oxygen and light getting in. What was inside decided the rest.

The three things that actually shorten it

Residual moisture in the food, which lets enzymes and remaining microbes keep working slowly and, in the worst case, allows mould once it migrates to one spot.

Fat, which oxidises with or without oxygen present, so nuts, fatty meat and whole milk powder are short lived whatever the bag. And temperature: every rise in storage temperature shortens shelf life, which is why a garage roof space is a poor store.

Moisture is the variable you control

Fruit dried until leathery is not dry enough for decades, only for months. For long storage you want brittle, and for freeze dried food you want a piece that snaps at room temperature with no cool spot in the centre.

Condition dried fruit and vegetables for a week in a loosely closed jar before sealing. It evens out the moisture between pieces and shows you the batch that needs another few hours.

Mylar thickness

Below about 3.5 mil the film is easy to puncture and less reliable as a barrier. Around 5 mil is the usual choice for food you intend to keep for years, and 7 mil upwards for bucket liners that will be handled.

Thickness buys puncture resistance more than barrier performance. A thin bag inside a bucket often outlasts a thick bag on a shelf where mice can reach it.

Freeze dried against dehydrated

Freeze dried food ends up at a lower residual moisture, so it stores longer: years in mylar against months to a couple of years for dehydrated, all else equal.

Dehydrated food is not a poor relation here. For fruit and vegetables you will eat within a year or two, a jar in a dark cupboard is enough, and it costs nothing in bags.

Checking a bag years later

A properly sealed bag with a working absorber goes slightly firm as the oxygen is taken up. A bag that has puffed, or one that feels loose and soft, has lost its seal.

Any smell of paint, crayon or old nuts on opening means fat has gone rancid. It is a quality failure rather than a safety one, but it will not improve. Mould or a sour smell means the batch goes out.

Do you need absorbers with mylar? For long storage, yes. The bag blocks new oxygen; the absorber removes what was sealed in.

What size for a gallon bag? 300 to 500 cc.

Does food really last 25 years? Dry low fat staples can. Dried strawberries and jerky will not.

Safety note. Shelf life figures are quality estimates, not guarantees. Discard any batch showing mould, an off smell or stickiness whatever the date on the bag, and never rely on packaging to compensate for food that was not dried fully.
