The numbers
Most home batches finish between 24 and 40 hours. Lean, thin food like sliced strawberries or cooked rice runs at the short end. Dense, wet, fatty food like whole stew or thick meat runs long, sometimes past 45 hours.
Manufacturers quote roughly 20 to 28 hours for a standard load, and owner reports consistently land higher than the brochure figure, so plan for the top of the range.
What stretches a cycle
Water content first. A tray of watermelon carries far more ice to remove than the same weight of cooked chicken.
Thickness second. Pieces over about 15 mm slow the cycle sharply because vapour has to travel out through the frozen structure.
Then load and starting temperature. Pre-freezing trays in a chest freezer before they go in can cut several hours off the cycle, because the machine does not have to do the freezing stage itself.
Knowing it is done
Weigh a tray before and after if you want certainty. The batch stops losing weight when it is finished.
By feel, break a thick piece in half. Any cold spot in the centre means ice is still there and the batch needs more dry time. Freeze-dried food should be room temperature throughout, not chilled.
Planning around it
Start a batch in the evening so the long dry phase runs overnight and finishes the following afternoon.
Do not open the door to check early. Breaking vacuum restarts part of the cycle and adds hours.

Safety note. A shortened cycle is the most common cause of storage failure. If a piece feels cold in the centre, it is not dry, and sealing it will spoil the batch regardless of the packaging used.
